又来分享我家的午餐啦,今天的主角只要就是油菜,春天的油菜特别的鲜嫩,在蔬菜中,小油菜的含钙含量算是最高的,每100克的小油菜就含有153毫克的钙,比同等含量的大白菜要高出3倍,比猪肉要高出25倍,建议家有小朋友的,春季不要错过这个菜,今天午餐我是用油菜蒸了一个鸡蛋蔬菜糕,

还煮了一锅丸子汤
,还煮了一个麻婆豆腐,午餐又是丰富的一餐。

/猪肉丸子/
1、丸子里面我搭配的是猪肉和山药,猪肉稍微改一下刀
,然后加点姜片打成肉泥,不用特别细,带点颗粒感就有点像那种手工剁的,吃起来口感会更好吃;

2、山药我就用了一根儿
,削皮了用刀拍一下,然后剁小一点;

3、装到一起了来调味
:盐、糖、鸡精、胡椒粉、料酒、生抽、蚝油,再来点葱花,搅拌搅拌,再来点大料水(就是葱、姜、花椒泡出来的水),可以去腥增香,多搅拌摔打一下,上劲儿了就可以了;

4、锅里烧水,丸子都是温水或是冷水下锅
,虎口挤出,勺子刮一下,放锅里慢慢煮就行,小火先把丸子煮熟;

5、飘起来了就撇一下浮沫
,然后继续煮个几分钟,把肉煮熟了就行了;

这个丸子就是家庭做法,很简单的
,吃起来很鲜,熟了就捞出来,吃不完可以放冰箱保存,煮汤的时候拿出来直接煮就行;
6、我今天是泡了一点裙带菜,用它来煮汤就更鲜了;

7、锅里葱姜蒜爆香了就把裙带菜加进来炒一下
,再加一碗开水,丸子也倒进来,稍微的煮一会儿,5分钟左右就差不多了,

调味加点盐和胡椒粉,出锅前加把枸杞和葱花,猪肉山药丸子汤就好了;

/蒸鸡蛋糕/
1、鸡蛋糕的话我是用了一点小油菜,做了一个蔬菜版本的
,先把蔬菜焯一下水,然后切小一点,不喜欢吃小油菜的就用其他的菜,像菠菜、空心菜这些都可以;

2、再来打鸡蛋
,5个鸡蛋、一勺盐、一点料酒,再加一点点淀粉水,给它先搅散,再加150克的温水,蔬菜也倒进来,拌一拌;

3、接着倒碗里面来蒸
,水开上锅,大火10分钟就能熟;

/麻婆豆腐/
1、这个时间来做豆腐
,先把它切小块,再放到锅里面用水煮一下
,加点盐
,煮个3分钟就捞出来;

2、锅里油烧热了加点肉沫,先给它炒一下
,变色了加葱姜蒜,再来一勺豆瓣酱,先炒出红油,然后加点料酒、生抽、胡椒粉、盐、糖;

3、最后再来一碗水,先给它煮开
,然后把豆腐倒进来,继续煮个5分钟,让豆腐入一下味,出锅前再加把葱花;

这个豆腐真的太香了,超级下饭
