2023年的第一期分享，就从甜蜜烘焙篇开始吧！本次分享主题：适合宝宝吃的无糖版黄油饼干。烘焙新手推荐收藏一波！

因为很多宝妈都不想给宝宝太早摄入糖和盐，这款饼干就非常合适。说是给小朋友吃，其实考虑控糖的大人吃也OK，用奶粉来提味，浓浓的奶香味，香酥可口。关键做法chao简单无难度

考虑到需求不同，这一期会分享两个配方：一款是酥掉渣的奶香一口酥，另外一款是更加酥脆的黄油饼干，口感会略有不同，同时会和大家说明制作黄油曲奇需要的注意事项，绝对干货满满哦！

一、新手烘焙友好制作说明

考虑到不少宝妈都是烘焙新手，如果还没有入手烤箱又不知道选哪款烤箱的话，可以参考我之前的烤箱选购分享。 

这一期重点说说有关制作方面的注意事项

（一）关于烤箱温度

烘烤任何点心，都需要提前预热烤箱，通常建议时间至少在5-10分钟进行。

关于烘烤温度，因为每台烤箱秉性不同建议根据自家烤箱的脾气来调整温度和时间，最后几分钟的时候一定要观察饼干表面的上色来判断。做烘焙不要担心失败，熟能生巧，在烘焙上同样适用！

（二）关于黄油软化

冬天温度低，黄油不太好软化，发酵黄油的软化会比普通黄油更快一些。大家会可以试试下面三种方式：

1、微波炉10秒左右加热来判断状态。稍微有部分融化不用担心。

2、使用烤箱，开启发酵30-36度左右，半个小时左右。如果做裱花曲奇也可以通过这种方式来给曲奇保温。

3、黄油切成小块放在平盘里，杯子倒入烧开的水，趁着杯壁变热，把水倒掉，倒扣在黄油上就好。

（三）关于烘焙工具

制作饼干需要打发黄油，电动打蛋器会更推荐。以下两款亲测都好用，分别是有线款和无线款推荐。

1、乔立B78无线电动打蛋器

2、凯伍德HM220有线打蛋器

3、饼干模具

为了让造型更好看，这次用到了擀面杖模具。如果家里没有也没有关系，可以用刀背或者杯盖按压。 

（4）关于烘焙食材

和大家分享我自己在用的食材品牌，如果大家不想额外做功课，照着买也不用担心踩雷！

1、乐荷有机黄油

除了贵没毛病。产自荷兰的有机黄油，奶香味浓郁，口感很棒。给小朋友做的零嘴或者面包我会选择它。它不是发酵黄油，倒是和总统黄油有的比。好价参考：166元/3*250克

2、低筋面粉

新良的很好用，性价比也更高。 

二、配方1：酥掉渣的奶香一口酥

（一）食材配方

黄油80克   低筋面粉100克   奶粉25克   蛋黄2个 

（二）表面装饰

黑芝麻   蛋黄1个刷表面

（三）制作过程

1、黄油提前软化，用打蛋器打发至蓬松发白。

2、分2次加入蛋黄，每次搅拌均匀后再加入下一次。

3、筛入低筋面粉100克和奶粉25克。

4、先用刮刀翻拌成絮状。

5、然后手揉成团。

6、面团分成11克左右的小剂子，揉成小圆球。克重只是参考，因为给小朋友吃，所以可以迷你一些。

7、把圆球压扁一点。

8、把面团挨个码好，彼此稍微留点距离。

9、刷上蛋黄液，撒上黑芝麻，记得烤箱预热。

10、170度烤15分钟，注意观察上色！拉开烤箱，充满着黄油阵阵香气和配方奶粉淡淡甜味的黄油小饼干出炉。

尝了一口单方面宣布最适合婴儿的饼干，就是它了！

这个配方的量可以做数量20+，日常密封保存，2周基本没问题。

因为加入的是蛋黄，非常酥，用手指一捏就碎了，非常适合小朋友当作零嘴吃。不想这么酥，可以试试下面一个配方，或者把蛋黄变成蛋清或者蛋黄+蛋清。

三、配方2：12月龄无糖黄油小饼干

（一）食材配方

黄油75g    蛋液25g    低筋面粉120g    配方奶粉30g

（二） 制作过程

1、黄油室温软化至顺滑状。

2、分两次加入蛋液，每次都用打蛋器打发至顺滑状。

3、过筛所有粉类。

4、用刮刀搅拌成团。

5、铺上油纸，擀面杖擀成4-5mm薄片，放入冷冻层10分钟左右。

6、擀面杖记得刷一层油，起到很好的防粘效果。

7、使用擀面杖的话，建议用点力，按压出形状。觉得花纹不够明显，可以重新压一遍。

再用模具刻出大小。

多余的面团可以重新整形再次按压操作。

8、把刻好的饼干挨个在烤盘里码好。

9、烤箱150度预热，烤15-17分钟，注意上色程度，小宝宝吃不用烤的太焦。

我用的是170度烘烤，上色略有点深。

10、出炉的饼干冷却封装起来OK，是不是超级简单呢？
