红琛舍19485931115 ______ 不必担忧正常食用 海口市食药监局食品生产处处长符策崖介绍,酱油中所使用的焦糖色素是用亚硫酸铵催化法生产出来的工业色素.世界卫生组织允许在食物中添加含有“4-甲基咪唑”的焦糖色素,且对于“4-甲基咪唑”的剂量有所界定,即每公斤不能超过200毫克.“这样的标准,是经过安全性试验的.”对于市民的担忧,符策崖认为,目前“4-甲基咪唑”仅用在动物身上研究,未对人体进行过实验,并非全部实验动物都发生癌变,用量远超过平时摄取的量,因此没足够证据证明其会使人得癌症.而酱油在烹饪食物中所加入的量不多,因此人从酱油中摄入的“4-甲基咪唑”量是符合相关规定和法定标准的,市民无须担心,可正常使用食用.
