【鲮鱼油麦菜】所需食材如下

详细步骤如下

食材处理及准备

【1】首先我们准备油麦菜两颗，从中间切开之后竖着切成小条备用，然后横刀切成5厘米左右的段备用。

【2】麦菜切好之后加入适量的食用盐，加入没过麦菜的清水浸泡清洗干净备用，这一步可以浸泡出菜中间的虫子或者虫卵。

【3】清洗浸泡之后捞出沥干水分备用，下一步开始准备鲮鱼。

【4】准备鲮鱼罐头一盒，打开之后将鱼肉剥离下来，再去除中间的鱼刺和腥味的鱼鳃，然后将鱼肉撕成小块备用。

【5】再加入少许罐头中的豆豉和油，然后另外加入少许永川豆豉（或者浏阳豆豉），没有永川豆豉也可以用阳江豆豉代替，然后将其搅拌均匀备用。

【6】准备大蒜几个拍散之后剁碎备用，准备适量的猪油渣剁碎备用，没有的同学也可以不加，下一步开始制作。

开始制作

【1】首先我们把锅烧热，锅烧热之后加入适量的底油烧热。

【2】油温6成热之后加入切好的麦菜，同时下麦菜的时候加入半勺清水。

【3】然后开中火翻炒15秒，这是通过带油少水的方式高温焯水，这样的好处是焯水之后成菜不变色。

【4】翻炒15秒油麦菜变成深绿色之后，倒出沥干水分备用。

【5】然后重新把锅烧热，加入少许猪油烧化，油温3成热之后，加入准备好的料头小火爆香（混合豆豉、蒜米）。

【6】料头爆香之后加入准备好的鲮鱼炒热，鲮鱼炒热之后加入油麦菜下锅。

【7】麦菜下锅之后加入食用盐1勺调味（约2克），加入少许白糖，加入少许鸡精 。

【8】然后开中火翻炒均匀即可出锅装盘。

【9】一道翠绿爽口的鲮鱼油麦菜就制作完成。

技术总结

第一

油麦菜和莴笋的区别是莴笋的根粗叶少，相对来说叶子比较粗糙，油麦菜的根少，嫩叶比较多。

第二

此菜在清洗的时候最好用更多的水浸泡，否则油麦菜中间会残留异物。

第三

有条件的同学可以尽量加入一整盒去骨的鲮鱼，这样成菜之后特殊的香味才会更加的突出。

第四

此菜加入永川豆豉和油渣炒会更香，没有的同学也可以用其它豆豉代替。
