都说“一日之计在于晨”,在一日三餐中,早餐扮演了尤为重要的角色。只有在早晨摄取了足够的营养,才能让人有充沛的精力和良好的状态,开始崭新的一天。

那不知各位饭团早餐都吃得如何呢?小二随机采访了一下:

有的饭团爱吃汉堡、煎香肠,还要再配上一杯香浓的咖啡提神醒脑;

\n

有的饭团喜欢包子、油条、鸡蛋灌饼、煎饼果子,觉得这些比较抗饿,更有利于早上好好工作;

\n

但也有饭团认为早上吃太多碳水主食不好,还是只吃点牛奶、鸡蛋、新鲜蔬果比较健康……

确实,有不少人对早餐吃碳水这件事望而却步,因为有言论称:早晨胰岛素敏感性比较高,这个时候吃碳水特别容易囤积甚至转换成脂肪。但事实真的如此吗?

\n

非也!营养师蒲蒲解释,其实人在睡了一夜后,体内会消耗大量的葡萄糖,这个时候急需补充碳水来维持血糖的平衡。而且,早上吃碳水还能够给我们的大脑补充养分,维持接下来一天的体力运动和脑力运动,给我们的身体提供满满的能量。

也就是说,早餐要想吃得好,主食碳水不能少!

今天小二就邀请来了两位做早餐特别厉害的嘉宾——美食爱好者李文波、天津菜大厨王宁,赶紧看看他们会带来什么高碳水美味吧!

李文波要做的是油条包麻糍,一听名字就觉得能量满满,制作时不知有何诀窍呢?

油条包麻糍

将提前浸泡一夜的糯米清洗两遍,放入蒸锅中铺平,开锅后蒸30分钟。

糯米

\n

糯米中支链淀粉含量高,黏性大,并且高温更容易糊化,也增加了糯米的黏性,因此常常用来做黏黏的麻糍、年糕等食品。

将蒸好的糯米放入石臼中,加入开水,捣成麻糍,捣好后取出放回锅中保温备用。

\n

窍门:捣麻糍的时候分批加入开水,更好捣开,且麻糍口感更细腻;取捣好的麻糍时,手上抹点熟油可以防止粘手。

在水中加入4克盐、10克泡打粉、2克白糖、2克小苏打、2个鸡蛋,搅拌均匀后倒入1000克面粉中,加适量食用油和成面团,放入冰箱冷藏一夜,油条面就做好了。

将油条面切成小剂子,中间“走水线”,即用筷子沾水压一条线,然后将两个面剂子叠在一起,用刀背再压一下加深水线。

又叫做打水条,是制作油条时的烹饪技巧;

\n

油条面抻好之后,用筷子沾水在面饼表面压条线,可以给油条塑形,同时利于油条炸好后分开。

锅内倒油,油温180℃时下入油条,炸至金黄后捞出控干多余油脂。

\n

将油条压扁,取一块麻糍抻开铺在油条上,按喜好加入配料后再对折即可:

【黑芝麻果仁口味】取适量白糖、黑芝麻、干果粉搅拌均匀,撒在麻糍上;

\n

【蜂蜜芥末肉松口味】在麻糍上面挤入蜂蜜芥末酱,撒上肉松。

油条的酥脆和麻糍的软糯相得益彰,口感层次极为丰富,给口腔带来巨大的冲击力,胃也得到了双重的满足。冬日早晨吃上这样一份,绝对是能量满满,整天都干劲十足~

如果觉得油条包麻糍单吃有点干,那还可以搭配一个水果酸奶沙拉来润一润。

碗中倒入酸奶,加入芒果、火龙果、蓝莓、干果即可。

水果酸奶沙拉口感酸酸甜甜,不仅开胃可口,营养也很是丰富,无论是搭配油条包麻糍,还是和别的碳水主食一起吃,都很适合。

接下来轮到王大厨大显身手了,他今天要带来的是天津的经典早餐——卷圈。

是天津的特色小吃,它是将豆芽菜、香菜等菜品混合在一起,再加入芝麻酱、豆腐乳等调味做成馅料,用春卷皮或者油豆皮包裹起来,裹上面糊炸制而成。一般搭配大酱吃,常常作为早餐食用。

将香干、面筋、红粉皮改刀成丁,香菜切碎备用。

红粉皮

\n

天津特产,做粉皮时加入红色的可食用色素,寓意喜庆吉祥。

面粉中加凉水调成较为黏稠的面糊,加适量盐增加底味,搅拌均匀备用。

碗中放入红腐乳,搅碎后加入腐乳量一半左右的芝麻酱,搅拌均匀制成酱汁。

\n

将酱汁加入绿豆芽中抓拌均匀,再放入红粉皮、香菜碎、面筋、香干搅拌均匀,馅儿料就准备好了。

用豆皮或春卷皮包裹馅儿料,用面糊封口。

锅中倒油,下入卷圈,炸至表面金黄即可出锅。

用新烙的大饼裹着新鲜炸好的卷圈,一口咬下去,豆芽菜的爽脆、面筋的劲道、酱料的咸香全都萦绕在舌尖,妙不可言。真没想到,这些平凡的食材组合,竟也能成就如此无与伦比的味道。
