新手学做蛋糕100种

Halo,我是乃们的老盆友:山贼95270!

熟悉我的小伙伴都知道,我对于烘焙有着疯狂的执念,以至于单独给自己运营了一个账号:泡泡烘焙不藏私,希望能够帮助更多爱好烘焙的新人小伙伴少走弯路、理性买买买。所以为了能够有更扎实的知识储备,除了自我学习之外,也在寻思着是不是可以出去学习,这其中就包括今天提到的法国蓝带。

我纠结的两所学校,一个是法国蓝带,一个是雷诺特,不过更让我纠结的是费用以及时间。有首歌是怎么唱来着,我想去桂林啊我想去桂林,可是等我有了钱又没时间,就是因为你需要在家庭、事业之间去平衡。去不去是后话,这次刚好遇到法国蓝带上海校区开放了周末主题体验课。

看到推送的时候毫不犹豫报了名。选了两款我很感兴趣的课:一个是面包综合课,另外一款是黑森林蛋糕。我的结业照附上~

课程原则上是不能拍照的,不过这次老师们都很友好,默许我们拍照。至于周末课程带给我的心得体验,我放到最后说。不得不说,短短的两场课程真的让我收获不少。我就把黑森林课程中学到的知识点融合到很多人询问的戚风蛋糕教程里头。如果你能认真看完本期分享,毫无疑问,一定可以做出超级蓬松有弹性的戚风蛋糕,我也会分享如何给蛋糕徒手脱模视频!这么掏心窝、超详细的分享记得给我来个一键三连呗~

一、戚风蛋糕制作注意事项抢先知

很多人被戚风“气疯”过,戚风蛋糕其实并不难,请仔细看完成功关键点再动手!

(一)关于食材

1、鸡蛋必须新鲜!建议用普通大小洋鸡蛋,蛋白含量高。 

2、柠檬汁或者白醋主要是去除鸡蛋的腥味,也可以让蛋白霜功能更稳定,实在没有就不加。

3、细砂糖推荐大家一定使用这种比较细的砂糖或者糖粉,更加有助于蛋白霜的打法,我有试过粗颗粒糖,很有可能会有糖颗粒残留。

3、很多人问油的问题,只要是无色无味的油都可以,瓜籽油、花生油就不推荐了!

(二)关于工具

1、用阳极模具,不能垫油纸,不能用不粘模具,这些都会影响戚风爬高。

2、确保料理盆干净无水无油,这一点很重要!

3、参考给出的温度不用担心踩雷,但是烤箱个体存在差异,烘焙新手推荐买个烤箱温度计。比较推荐美德时。 

(三)关于操作

1、戚风蛋糕需要把蛋白和蛋黄分开打发,是因为单独的蛋白比全蛋更容易打发膨松。

2、戚风蛋糕的蛋白要打发至硬性发泡,倒扣打蛋盆不会掉落的状态。

3、正确的搅拌对戚风的成功至关重要。

一定是2点钟方向刮刀下去,然后从底部刮起来,7、8点钟方向出。注意:动作尽量轻柔,避免消泡。第二,是翻拌不是画圈搅拌。

4、烤之前轻震模具震出大气泡,戚风蛋糕最后成品就很细腻。戚风蛋糕出炉后摔模震出热气+倒扣,否则戚风蛋糕顶部会回缩。

(四)关于烘烤

1、预热很重要,不管是做蛋糕、烤饼干还是面包!150度的温度推荐至少提前5分钟预热。

2、如果戚风蛋糕在烘烤过程中顶部开裂,真的没有关系。烤完倒扣就完美了!烘焙书上也写了烘烤过程中面糊会膨发涨高,表面或许会出现爆裂,不必在意。只要不塌陷不缩腰就是成功!

3、戚风蛋糕顶部如果开裂的非常严重,是上火温度过高,或者离上火太近,应该适当调低温度。反之,戚风蛋糕底部回凹,是因为下火温度过高或者离下火太近。

二、0失败配方参考

新手不建议改动配方哦!

我之前有分享过2个蛋的6寸戚风配方,这次分享3个蛋的,成功率更高一些,也更加适合烘焙先新手~ 家庭制作想少洗碗的话,可以直接挨个称重加入食材。

(一)6寸原味戚风

蛋黄糊配方:

蛋黄\t3个  

细砂糖\t13g  

玉米油/色拉油\t30g  

牛奶\t40g  

低筋面粉\t60g

蛋白糊配比:

蛋白\t3个    

细砂糖\t35g  

柠檬汁/白醋(可以不放)\t几滴

6寸温度和时间

上下火150度,中下层烤50分钟。不想开裂,可以参考两阶段烘烤,130度25分钟,150度20-25分钟

(二)8寸原味戚风

蛋黄糊配方:

蛋黄\t5个  

细砂糖\t30g

牛奶\t70g

植物油\t40g

低筋面粉\t85g

玉米淀粉\t15g

蛋白糊配方:

蛋白\t5个

细砂糖\t60g

柠檬汁/白醋(可以不放)\t几滴

 8寸温度和时间:

上下火150度,中下层烤65分钟,40分钟后盖锡纸。

不想开裂,可以参考两阶段烘烤,130度40分钟,150度25分钟左右

三、超详细制作步骤

采用后蛋法来制作,所以先制作蛋黄糊。

1、把称量好的牛奶、细砂糖和玉米油倒入料理盆,用手动打蛋器搅拌,让牛奶和玉米油更好的融合,直到细砂糖全部融化。

如下图,最后搅拌出来呈现乳化的状态。

2、筛入称量好的低筋面粉和玉米淀粉,用刮刀划Z形搅拌均匀至没有面粉颗粒。千万不要画圈搅拌,避免面粉起筋!

3、蛋黄分次加进去,用蛋抽一字形搅拌均匀,最后拌出来的面糊是细腻顺滑的,蛋黄糊就完成了。

为了少洗料理盆,我自己的做法是挨个的把蛋清和蛋黄分离。蛋清料理盆可以放入冰箱冷藏一会儿再操作。

4、最终如下图这种顺滑细腻的蛋黄糊,就做好了!

5、接下来开始打发蛋清,冰箱里取出蛋清,加入柠檬汁或白醋。烤箱这时候可以同步开启预热咯!

6、用电动打蛋器中高速档打发蛋清,打发至现在大泡泡鱼眼状粗泡时,加入1/3细砂糖。

7、继续打发至蛋白非常蓬松,泡沫细腻的时候再加入1/3细砂糖。

8、当蛋白开始有纹路且不会马上消失时,加入剩下的细砂糖。

如何判断打发到“硬性发泡”状态呢?

1、拉起打蛋头可以拉出直立的蛋白尖,稍稍稍弯曲也是ok的。

2、倒扣打蛋盆蛋白不流动。

3、蛋白霜状态是很细腻有光泽的,如果粗糙就是打过头了。

9、先取1/3蛋白霜倒入蛋黄糊翻拌均匀。

注意翻拌手法哦,我找了张图给大家示意。翻拌过程刮刀从右上方2点钟划入,抄起底部,左手转动蛋盆,刮刀从下往上往盆边提起,不断重复。

如果还不清楚,评论区可以给我留言!下图是混合好的状态。每次混合的时候都可以采用少量先混合,然后再混合剩余部分。

10、混合好的蛋白霜与蛋黄糊再倒回盛有蛋白霜的打蛋盆内,继续翻拌均匀。

直到戚风面糊拌匀至看不见白色的蛋白霜为止,拌好的面糊质地是细腻的。

11、模具不需要铺油纸,直接将拌好的面糊从15cm高处直接倒入模具中。

震动烤盘,使面糊均匀,震掉大气泡。

12、预热好的烤箱,上下火150度,中下层,6寸60分钟8寸烤65分钟。

注意温度是指烤箱实际温度,时间只是参考,烤的过程中戚风蛋糕一直在涨高,等到看到有点回缩了,把牙签插进去没有带面糊出来就代表熟了。

13、戚风烤熟后出炉后先从15cm高度摔两下,震出热气后第一时间倒扣。我因为是8寸的配方分成了2个6寸蛋糕烘烤,所以没有满模,即便是倒扣也不用担心有烤网的纹路。

14、戚风蛋糕完全冷却后用手按压蛋糕边缘一整圈使蛋糕体与模具壁脱离。冷却时间没有固定时间,推荐1小时以后。

我有对比借助脱模刀和徒手脱模,不得不说徒手脱模的就是好看!

四、法国蓝带短期学习心得

第一次走进蓝带还是很激动,视频、照片没少拍,收货也不少。后续会整理下和大家分享!这期先说说我自己的心得。

1、如果你和我一样对于犹豫是不是要报蓝带学习,可以关注蓝带公众号,他们会不定期推出周末主题课,会让你对蓝带的学习有个初步了解,包括课程模式!

2、蓝带的课程都是英语教学,不过会有翻译,不用担心听不懂!不过如果你有英语基础,一些细节你可能会更好地了解!

3、体验课的课程是相对比较紧凑的,你可以抓住机会问一些你日常制作过程中的疑问点。我这次问了一些问题,真的打破我之前的执念,比如

第一次发酵是不是要制造湿气?

海绵蛋糕是不是也要震动一下?

蛋糕糊翻拌是不是越快越好?

……

后续打算整理好再和大家说说,记得点赞

4、去学之前,还是推荐有一些烘焙基础,这样就能够更好掌握,否则好像听懂了,但实际做起来可能并不是那么一回事。每节课做个复盘整理!

5、最后想说的是里边的老师还是挺热情的,只是正式上课原则上是不可以拍照的,多做小笔记。

6、至于是否花十几万去学习,考虑清楚自己学习的目的是什么?你是否有相应的时间安排,这些我觉得还是挺重要的,钱、时间都是成本。
