蒸馒头的七个步骤

要说最百搭的主食,非馒头莫属!配粥、配汤、配面条、配小菜,没有它hold不住的。白白胖胖、蓬松暄软的大馒头一掰开,就让人迫不及待想咬一口!

好的馒头要质地暄软、表皮光亮、颜色自然不死白,吃起来暄暄软软。这种馒头一出锅,谁不想来一个呢?但是要想做出光滑不塌陷不回缩有弹性的馒头,还是有一些技巧的。

果酱这期将教大家如何做出松软香甜又好吃的馒头,即使是新手小白,跟着步骤一步一步来也能做出好吃又漂亮的馒头!

· 食 材 清 单 ·

中筋面粉 500g

酵母 5g

水(或牛奶) 240g

白糖 10g

食用油 5g

· 做 法 ·

1.碗中加入温水,倒入酵母加白糖搅拌溶解等3分钟,出现气泡表示酵母活性已经激发

2.盆里放面粉,把酵母水倒入面粉中,边倒边搅拌然后加水或牛奶,搅拌成絮状

3.揉成光滑的面团(大概3~5分钟)盖上保鲜膜发酵1小时

4.发酵到1.5~2倍大就可以了

5.可以扒开看一下,都是满满的大小气孔

6.面垫上撒点干面粉,开始二次揉面排气

7.面揉好后搓成长条,用切刀切成大小相同的剂子

8.再将每一个面剂子揉光滑,整理成馒头的样子,末尾有动态图教学

9.将做好的馒头放到蒸锅里再次醒发20分钟

10.再次醒发的馒头明显变大,如果拿起来也会感觉到很轻,轻按一下也能够回缩

11.水烧开后用中火蒸12至15分钟,关火焖3分钟即可

12.做好的馒头,掰开看气孔结构均匀,蓬松暄软
