转眼间,2023年春节就快到了!年夜饭你想好做什么菜了吗?大年三十年夜饭是最重要的一顿饭,是一年来全家团圆的重要时刻,今天我分享我家的年夜饭菜单,9菜1汤寓意十全十美,照着做省事又省心,过节气氛浓!喜欢的朋友可照着做起来,祝大家新的一年讨个好彩头。

★ 梅菜扣肉

【食材】:五花肉 适量、姜葱 适量、料酒 2勺、生抽 3勺、老抽 2勺、梅菜干 适量、盐 少许、白糖 10克、

【做法】:1、五花肉冷水下锅,加入葱、姜、料酒去腥,煮20分钟捞出,表皮用牙签扎些小孔,然后四面抹上老抽晾干10分钟均匀上色,也方便后期入味;

2、锅内倒入稍多一些的油,能没过肉皮就行,油5成热的时候,将五花肉皮朝下下锅,盖上盖子避免溅油烫伤,小火炸至肉皮红亮捞出控油,煎好的肉放凉切片。

3、梅干菜用水提前泡好,挤干水切碎,入锅炒出香味,加盐、老抽、生抽、糖和一碗水焖煮5分钟。

4、找一个大碗,将猪皮朝下进行均匀摆放,铺上梅干菜,上笼大火蒸一个小时左右,最后把蒸好的肉扣入盘中即可。

★ 蒜香手撕蒸茄子

【食材】:茄子 适量、大蒜 5瓣、料酒 2勺、生抽 2勺、醋 2勺、白糖 1小勺、盐 1小勺、葱花 适量、

【做法】:1、把茄子蒂切掉,切7至8厘米的长段,隔水蒸熟,大约蒸15分钟;

2、蒸好的茄子拿出晾凉,顺着茄子纹理撕成长条,围成一圈摆放在盘子;

3、准备料汁,锅底烧油,中小火煸香蒜末,然后淋入生抽、香醋、料酒、盐、白糖煮开即可,撒上葱花,做好的料汁均匀的淋在撕好的茄条上即可。

★ 猪肉鸡蛋卷

【食材】:猪肉 适量、马蹄 8个、胡萝卜 1根、鸡蛋 6个、生粉 2小勺、盐 1小勺、蚝油 1勺、生抽 2勺、糖 1小勺、姜末 少许

【做法】:1、猪肉剁碎成肉末,放入生抽、蚝油 1勺、盐、白糖、姜末、生粉,朝一个方向搅匀上劲, 腌制入味;

2、胡萝卜和马蹄去皮剁碎,和肉末混合均匀。

3、鸡蛋加入少许盐和水淀粉打成蛋液。在锅底刷上少量的油,倒入蛋液煎成至金黄的蛋皮,盛出备用。

4、取适量肉馅, 均匀地铺在蛋皮上,从一侧开始卷起来,卷紧一点,边缘收口处可凃少许蛋液;

5、裹上一层保鲜膜,开锅再蒸20分钟关火,蒸熟后的鸡蛋肉卷凉透了再切就不会散了,切成小块即可。

★ 糖醋鸡丁

【食材】:鸡胸肉 适量、番茄酱 4勺、蚝油 1勺、生抽 1勺、鸡蛋 1个、白糖 2勺、白醋 1勺、料酒 1勺、盐 1小勺、面粉 适量、青豆 适量、

【做法】:1、鸡胸肉切小块,放入生抽、料酒、蚝油和盐,抓匀腌制半小时;

2、打入一个鸡蛋,放面粉拌成浓稠的面糊(太干可以加少许清水),倒入鸡丁拌匀,让每块鸡丁均匀挂一层糊。

3、锅中加入适量油,油烧至6成热时下鸡丁小火炸第一遍,炸到微黄捞起,把油温升高,再次把鸡肉复炸30秒,酥脆即可捞起。

4、锅中加入少量油,加番茄酱、白醋、糖和淀粉水,中火熬煮成浓稠的芡汁,倒入炸好的鸡丁,让肉都裹满糖醋汁,起锅前放焯熟的青豆翻炒均匀即可。

★ 金玉满堂

【食材】:西兰花 适量、黄瓜 适量、蚝油 2勺、玉米 适量、糖 少许、盐 少许、胡萝卜 适量、淀粉水 3勺

【做法】:1、将胡萝卜和黄瓜切成丁备用。

2、西兰花洗净切小朵,锅内烧开水,加入少量油和盐,西兰花焯水后捞起摆入盘中作为装饰;

3、将玉米剥成粒,和胡萝卜丁一起放入锅中,锅中加入适量的水煮至六成熟,捞出控水。

4、锅烧热倒入食用油,下入玉米、胡萝卜丁以及黄瓜丁翻炒片刻,调入蚝油、盐,糖适量,简单的调料就可以了,最后勾薄欠即可出锅。

★ 鱼香炒鸡蛋

【食材】:胡萝卜 适量,生抽 2勺,香醋 1勺,鸡蛋 3个,青椒 1根,洋葱 半个,木耳 若干,糖 1小勺,蚝油 1勺,淀粉 1小勺

【做法】:1、泡发的木耳切丝,胡萝卜洗净去皮刨丝,洋葱、青椒也分别切成细丝备用。

2、鸡蛋加盐和少许清水打散,锅内放入油 ,油热倒入鸡蛋炒散盛出。

3、再加入少量油,油热后下青椒丝,胡萝卜丝,木耳丝翻炒至断生,后加入炒熟鸡蛋翻炒均匀。

4、用香醋、生抽、淀粉、糖、少量清水调成鱼香汁,倒入锅中火翻炒入味即可盛出。

★ 剁椒鱼头

【食材】:胖头鱼 1个、葱姜蒜 适量、料酒 2勺、剁椒 适量、胡椒粉 少许、蒸鱼豉油 2勺、盐 适量、糖 1小勺、

【做法】:1、鱼头从鱼背开刀,劈开成相连的两半,去掉黑膜,冲洗干净血水,鱼鳃下的肉也要打花刀,方便入味,加入料酒和盐涂抹整个鱼头腌制30分钟;

2、将剁椒放入碗中,加蒸鱼豉油,胡椒粉,盐,糖,姜末,蒜末搅拌均匀。

3、盘子铺入姜片,放上鱼头,均匀的铺上剁椒酱料,蒸锅上汽后放入鱼头蒸10分钟。取出鱼头撒些葱花,用热油浇入葱花上即可。

★ 鲜虾酿香菇

【食材】:鲜虾 适量、胡萝卜 适量、香菇 适量、淀粉 1小勺、生抽1勺、胡椒粉 少许、姜末适量、料酒 1勺、盐 1小勺、

【做法】:1、虾去壳去虾线,剁碎成泥放入碗中,加胡椒粉,料酒,姜末和盐腌制15分钟,然后加入胡萝卜碎,朝着一个方向拌匀。

2、将香菇洗干净去掉香菇柄,把调好的馅儿嵌入香菇内,水烧开后放入蒸锅,水开后上火蒸16分钟即可;蒸出来的汤汁倒入炒锅里加热,加盐、蚝油和水淀粉勾薄芡,浇在虾仁香菇上即可。

★ 酸汤金针菇肥牛卷

【食材】:金针菇 适量克、肥牛卷 适量、黄灯笼辣椒酱 2大勺、白醋 2勺、盐 少许、糖 少许、料酒 1勺、盐 1小勺、小米椒 适量、姜蒜 适量、

【做法】:1、锅里热油把蒜末跟姜片放进去炒香,然后放入酱翻炒出香味,加适量开水或者高汤大火烧开,加入料酒、盐、糖和白醋调味;

2、水开后分别放入金针菇和事先解冻的肥牛烫熟即可捞出,变色即可,时间长会让肉质变老,将煮出的浮沫也用网筛滤掉;

3、盘子底部先垫上金针菇,然后铺上肥牛卷,撒上葱花和小米椒点缀,最后淋上热油即可。

★ 西红柿玉米菌菇汤

【食材】:西红柿 适量,土豆 适量、白玉菇 适量,鸡蛋 适量,盐 1小勺,玉米 适量,白胡椒粉 少许、香油 少许

【做法】:1、西红柿和土豆洗净切块,白玉菇洗净去根,玉米切成小段备用。

2、锅中放油,开中小火,放入西红柿和土豆翻炒出香味,再接着加入清水,倒入准备好的玉米、白玉菇煮十五分钟。

3、缓缓淋入鸡蛋液快速划开,加盐尝一下咸淡,按个人口味添加,白胡椒粉,临出锅淋上香油即可。
