上色最快的脆皮水做法

朋友推荐的这个馅,拖延症的我,放了仨月才开始整,过程是痛苦的,结局是美好的,香迷糊了。这个配方可以大概做96个,可以减量做。

用料
  • 花生油 325克
  • 水 72克
  • 全蛋液 45克
  • 细砂糖 227克
  • 水怡 28克
  • 枧水 7克
  • 中筋面粉 835克
  • 泡打粉 9克
  • 葱香馅 500克
  • 椒盐馅 500克
做法步骤

1、花生酥馅料打开,整体揉搓一下。

2、10克一个小球,因为太酥了不好成团,两个办法解决一下,第一个是加少许食用油揉搓均匀,第二个就是用这个保鲜膜用力挤压,再取出即可。

3、先把每一个馅料都分成团

4、花生油325克倒入盆中

5、纯净水72克

6、全蛋液45克

7、细砂糖227克

8、水怡28克

9、枧水7克

10、食材混合好

11、食材乳化搅打均匀

12、中筋面粉835克

13、泡打粉8克

14、面团混合均匀

15、成这个状态就可以,戴手套攥成团

16、取一小份擀平

17、用圆切模切出来,大概是15克,因为实在太懒不想称重。

18、饼皮包裹馅料,饼皮容易裂,尽量攥紧

19、成这个形状即可

20、放入花生形状模具

21、用力压紧脱模,如果粘的话可以模具抹油,或者撒点干粉

22、两种口味全部包好压成型,表面喷水。

23、风炉烤箱200度预热,转165度烤5分钟定型,出炉稍微放凉,再次喷水,165度12~15分钟出炉(烘烤时间跟烤的量有直接关系,稍微上色即可)\n平炉参考温度,180度预热,烤5分钟定型,出炉再次喷水再烤15分钟左右即可。

小贴士

1.每个烤箱脾气不同,温度和时间仅供参考。\n2.配方的量比较大,可以根据自己情况适当减量做。\n3.脆皮包的时候不太容易,熟能生巧。
