家庭葱爆海参的做法

葱爆海参属于传统鲁菜经典之一,做法非常精细,正宗葱爆海参用的海参是顺着海参刺切片,容易入味,我今天做的是完整版小海参,在家里做葱爆海参,过程简化一下,春节期间,在家的你可以露一手,给家人来一盘颜值爆表的葱爆海参!如果完全按照程序做觉得太麻烦,自己可以适当调整简化。

用料
  • 小头即食海参(或者提前泡发好的) 6根
  • 大葱 两根
  • 姜 适量
  • 盐 适量
  • 蚝油 适量
  • 料酒 适量
  • 味极鲜酱油 适量
  • 香菜 适量
  • 多力三益葵花籽油 适量
做法步骤

1、我今天用的即食海参,个头比较小,一斤大约12-16头左右,个头小直接用的完整的,大个的一定要顺海参刺切开,煨制时容易入味,解冻后的即食海参放入冷水内浸泡,只要是泡发好的海参都可以。

2、葱姜切丝准备好。

3、选粗细合适的葱白切5-6公分的段,打上花刀。

4、小油菜取菜心洗净焯水过凉控水备用。

5、葱白热水焯一下,可以避免葱白炸制过程起皮。

6、海参热水加少许料酒焯煮三二分钟。

7、鲁菜做法熬葱油是必须滴!锅烧干后加入适量多力黄金三益葵花籽,待油温升高加入葱姜炸。

8、再来一点香菜继续炸。

9、待把葱姜香菜炸干捞出,可以闻到浓浓的葱香味啦!

10、把葱白放入葱油中炸一下。

11、我个人喜欢葱白保持白色,轻微炸制就出锅,喜欢炸制发黄也可以哦!

12、葱油可以炸的多一点,炒菜都可以用,倒出来备用。

13、把炸过的葱姜香菜用一碗热水10-15分钟浸泡待用。

14、把葱姜香菜捞出来,水放入锅中。

15、把海参加入锅中开始炖煮(正规版是用高汤炖煮,家里有高汤的用高汤),加入适量生抽,蚝油,一点点盐,盐切记不能放多,生抽,蚝油都自带咸味,怕咸了,第一次做可以不加盐,多做几次,根据自家口味适当调节盐的用量。

16、小火煨制20分钟以上,加上适量葱油,海参遇油易融,所以葱油晚一点加。

17、汤不要熬干,能浸泡过海参为原则,海参浸泡在汤汁里,10-20分钟,如果你在忙着做其他时间,时间可以加长,让海参充分入味。

18、锅内加适量葱油,待油温升高后加入葱姜,一点小米辣,生抽爆锅。

19、加入葱段翻炒。

20、炒出葱香味。

21、海参连汤一起加入锅中。

22、加入适量淀粉水,淀粉水分两三次加入,汤汁熬至浓稠,出锅前再来半勺蚝油提鲜。

23、小油菜摆盘装饰。

24、海参葱白盛入盘中,淋上汤汁,家庭版的葱爆海参完美出锅!

25、过年在家露一手,神仙大厨就是你啦!

小贴士

1.海参必须是泡发后可以直接食用的。\n2.一定注意盐的用量,一丢丢,甚至不加都行,因为生抽,蚝油都有盐味,一定不能加多盐。\n3.海参壁比较厚,不容易入味,煨制,浸泡时间不能过短,用大海参做一定切开 才好入味。
