自制简易月饼模具

此配方为50g模具,10个月饼配方。\n喜欢广式月饼皮的来学学

用料
  • 蜂蜜 100g
  • 玉米油 35克
  • 高筋面粉 130克
  • 食用碱水 2g
  • 豆沙馅 200g
  • 蛋液 一个鸡蛋打散
做法步骤

1、蜂蜜100g,加入35g玉米油,加2g碱水混合搅拌

2、充分搅拌好

3、加140g面粉

4、充分混合搅拌,捏一捏

5、这样面团就好了

6、面团封保鲜膜醒一个小时以上

7、准备红豆沙,红豆,加水煮,我用的高压锅快一点,煮到可以捏的动就可以了,然后红豆水加红豆一起用搅拌机打碎,放不粘锅里,开火一直翻炒把水炒干,根据自己合适的甜度加白砂糖,变成上图状就好。

8、把红豆沙馅分成10个,20g的小球。

9、把面皮分成10个30g的小球。

10、准备好就可以开始包馅了

11、面皮捏成圆形,旁边薄点,中间厚点,慢慢包住馅,往上推

12、不能太用力,慢慢推上去,封口

13、封好后,竖着捏成椭圆,封口在最下面

14、封口在最下面

15、沾一点淀粉好脱模

16、放入50g模具

17、压在烤盘上

18、全部压好

19、洒水防止开裂

20、185℃上下火烤7分钟

21、拿出来刷蛋液

22、继续170℃烤16分钟

23、烤完后有点硬,放袋子里第二天就软了,很好吃

24、豆沙馅自己做不甜,很适合我的口味

秋辰念13739074476 ______ 第一步:酥皮月饼12个用料: 低粉280g、牛油180g(没有买到麦琪琳只能用牛油了还好效果不错)、冰水4大匙、糖一大匙(做出来点心太白,个人感觉用红糖或是焦糖应该更好)、馅料另备. 第二步 2.牛油放在面粉上用叉叉碎,均匀粘满面粉,加入糖一大匙;冰水4大匙;搅拌均匀放入保鲜袋揉成团,擀压成厚片,撒上面粉,折叠几下.中途若温度过高面团变软,可以放入冰箱急冻几分钟. 第三步 3.将面团平均分成12份,包上豆沙馅;压模后涂上蛋黄液;烤箱提前预热5分钟,放入烤箱上层;上下加热20分钟.转下层,上发热5-10分钟即可出炉;我的烤箱很小,没有温控,所以全靠自己感觉,若有温控的,190度预热,200度加热15分,180加热10分,差不多了.
