菜籽油为什么会起泡沫

用料
  • 油带鱼 一斤
  • 金龙鱼外婆香小榨菜籽油 15克
  • 生姜大蒜花椒小米辣 适量
  • 葱姜料酒 一勺
  • 生抽 一勺
  • 老抽 一勺
  • 海鲜酱 一勺
  • 小葱 一根
  • 白胡椒粉 1克
做法步骤

1、先来个成品图

2、食材准备

3、带鱼洗净切块

4、热锅,放一勺金龙鱼外婆香小榨菜籽油

5、油热,放生姜大蒜葱白花椒小米辣,快速煸炒出香味

6、放入带鱼,慢慢煎到微微发黄

7、沿锅边放一勺葱姜料酒

8、放适量生抽

9、放入一勺海鲜酱

10、一大勺水,大火烧开,放一点点白胡椒粉

11、继续大火烧开直到鱼汁浓稠,尝尝味道根据自己口味微调!

12、出锅,撒一点葱花!

小贴士

带鱼很嫩,入锅煎的时候小心,等成型后小心翻面!带鱼很容易成熟哦!

谢甄群19446638805 ______ 我是油脂专业毕业的,曾在中粮、中储粮工作,你说的纯菜油理论上不知道你指的是哪种,如果起泡沫的话,就肯定不是纯菜籽油.如果是农村作坊榨出来的,那就有可能,我老家那边人们也是喜欢吃那种.但是,那里面还含有杂质、磷脂,酸价很高,颜色很深,而且烟点很低,就是起烟的温度很低.这在油脂上来说,只能叫做毛油.理论上是不能食用的,必须至少经过脱胶以后才能食用(就是脱掉里面的磷脂、杂质等),脱过胶的叫4级油,按照菜油的标准,4级就能直接食用了.
