烫面可以做韭菜盒子吗

        韭菜盒子是很多人童年经常吃到的一款美食,是以新鲜韭菜、鸡蛋、面粉和等做成的美食,是北方地区一道传统小吃。表皮金黄酥脆,馅心韭香鲜香。当你咬一口后,那种鲜香酥脆的口感会让你瞬间惊喜到。韭菜盒子其实做起来也不难哦,教你这个做法,做出的韭菜盒子放久了皮不硬,而且馅料里的韭菜也出不水,不论是卖相还是馅料,都非常地出色。你也学会它,做给家人吃吧~

面团材料:中筋面粉225g  开水60g  室温水75g  酵母1g  油12g  盐2g 

韭菜馅材料:韭菜240g  鸡蛋3个 鸡蛋里的盐2g  粉丝75g  食用油20g

香油25g  蚝油15g  生姜泥5g  白胡椒粉2g  五香粉1g  盐3g

材料可以做6个韭菜盒子

一、阳台种的韭菜又可以收割了,用的自家种的韭菜,新鲜采割,保证鲜嫩。洗干净,控干水分。之后切碎

二、首先需要用60g的开水来烫面,边倒水边用筷子搅拌温度就降下来了。然后用手稍微揉一揉

三,再用75g室温水化开酵母

四、将酵母水倒入面粉中,加入盐和油,上手揉面

五、揉成团看不到干粉为止,盖上盖子饧面20分钟

六、然后再揉面1分钟,面团表面就比较光滑了,继续饧面1个小时

七、碗里打入鸡蛋,用筷子搅散,加少许盐后继续搅匀

八,锅中热油,  油热后转小火。倒入鸡蛋 ,边煎边搅散。用筷子搅效果会更好,鸡蛋会更细碎一些,盛出待用

九、然后开水煮粉丝1分钟 ,捞出放入冷水中,控干水分再切碎

十、将韭菜、鸡蛋、粉丝倒入一个大碗中,加入香油,蚝油、生姜泥 、白胡椒粉、五香粉和盐,搅拌均匀

十一、面团取出,先把面团揉一下,揉光滑,再等分成6份

十二、撒上面粉 ,取一个面团朝上用手压扁,再用擀面杖擀开。将面团擀大擀薄,擀成椭圆形

十三、一半放上韭菜馅,用勺子整理下馅料,然后将另一半揭起盖上去

十四、一只手一边压紧面皮,另一只手压住封口黏合。然后把韭菜盒子放左手上,用右手的食指和拇指给它压花边

,这跟做酥饺的手法是一样的

十五、韭菜盒子都做好后,锅里下油用小火来煎饼

十六、煎到定型有点焦黄后就翻面。这时盖上锅盖 ,这样边角也能剪熟

十七、煎到这样的纹路出来,美味好看的韭菜盒子就做好啦
