做饼用开水烫面好吗

烫面的饼子是非常揉软的,再搭配油酥和鸡蛋,即便是直接食用也是好吃到停不下来。

用料
  • 面粉 300克
  • 开水 80克
  • 凉水 100克
  • 油酥部分 如下
  • 面粉 30克
  • 盐 3克
  • 五香粉 3克
  • 花椒粉 3克
  • 鸡蛋 1张/1个
做法步骤

1、面粉分成两部分,一半开水烫面,另一半凉水和面

2、一起揉成光滑的面团,松弛20分钟

3、20分钟后再次揉光滑

4、平均分成8等份,根据自己锅直径大小调整,我是22口径的平底锅

5、每一个刷油盖上保鲜膜,松弛1小时以上

6、准备油酥:面粉,盐,五香粉,花椒粉,食用油烧热泼在上面,搅拌均匀即可

7、再准备鸡蛋,一张饼配一个鸡蛋

8、取一个剂子擀开

9、均匀的抹上一层油酥

10、开一个口

11、从一头卷起

12、再竖起来按压成饼,继续松弛10分钟

13、依次擀开成圆饼

14、准备鸡蛋打散备用

15、热锅放入圆饼,全程用中火

16、倒入鸡蛋液

17、转动均匀烙30秒

18、翻面,再烙1分钟

19、继续翻面烙1分钟即可

小贴士

整个烙饼的过程大概2~3分钟,这个面团是比较偏软的,如果你在操作的时候擀不开或者回缩,就是面饼的松弛时间不够,再多等待一会儿即可。
