烙春饼的教程

本期《回家吃饭》来了一位踢馆应聘小二的嘉宾,小二地位遭威胁?这是一位不远千里而来的国际友人,能说会道、有文化、会做饭,一上来就讲了一口地道的中国话,还哼起了歌表演才艺。

有趣的是,这次两位嘉宾都是“左将军”,一位是行万里路寻中国味的美国教授—潘威廉,一位是京鲁菜大厨—许世全,这是一场两位左撇子间的较量~

潘威廉教授来自美国,在中国已经待了37年,现在在厦门大学教书。丰富多样的中餐吸引了潘教授留在中国,这次潘教授还自带了秘密武器—春饼,一起期待一下吧~

锅中热油倒入胡萝卜丝翻炒,将炒好的胡萝卜丝盛出备用,倒入豆腐干丝翻炒,盛出备用,加油倒入甘蓝丝翻炒,盛出备用,加油倒入韭菜段、荷兰豆丝翻炒,盛出备用,将拳头母切丝,倒入锅中翻炒。

“拳头母”别名“筋头母”,闽南风味小吃,因其形态似拳头得名,是将带肉筋的猪肉搅碎,加水、淀粉、香菇等,揉制成团,再煮熟而成。“拳头母”富有嚼劲,肉香浓郁,可以煮汤或炒菜食用。

把所有食材倒入锅中,加少许盐、胡椒粉、糖调味,将炒好的食材盛出。

将食材和酱料搭配,卷入饼中。

民间高手菜:海蛎煎

\n

鲜香美味海蛎煎,吃不够的闽南味

调制水淀粉,碗中加入水、红薯粉,将水和红薯粉搅拌均匀,将海蛎放入水淀粉中。

\n

\n

\n

窍门:制作海蛎煎选择小海蛎,方便和鸡蛋同时成熟。

\n

取两个蛋黄,锅中热油,倒入海蛎和水淀粉,将蛋液均匀倒在海蛎上,煎至成熟。

窍门:海蛎煎中加入蛋黄,使菜品颜色更金黄。

潘教授还特地带来了中西结合的春饼新吃法,带来了墨西哥的辣椒酱、奶酪、鹰嘴豆酱等,西式酱料搭配中式春饼,有咸有甜,搭配食材的鲜味,和谐不违和。海蛎煎也可放入卷饼中,更加有滋有味~

特级厨师菜:左宗棠鸡

火爆海外的中餐,大厨带来教科书级别做法

鸡腿肉去骨,切成小块儿。

\n

\n

鸡腿肉中加入胡椒粉、料酒抓拌均匀,加入淀粉、鸡蛋黄、水,再加入油,抓拌均匀

\n

窍门:面糊里加油,炸制后更光滑,口感更酥脆

锅中油热关小火,五成热油温下鸡腿肉,炸制浮起捞出,升高油温,油温升至七成热下鸡肉复炸,用热油淋浇洋葱和彩椒。

锅中热油,加入干辣椒、番茄酱、葱末、姜末、蒜末、料酒、酱油、生抽、米醋、水,加入60g白糖炒香,锅中淋入水淀粉。

韶章汪15233375928 ______ 烫面来烙春饼,面不要和的太软了,要不然的的手就黏住不好出来了,揪成小剂子,用擀面杖擀成小薄圆饼,然后擀好的面饼正反两面抹上食用油,两张饼合在一起,做成双层薄饼,等你都做好面饼了,就在平底锅里做油,等油热了放入面饼,开始烙饼,正反两面烙,等面饼两面出现焦黄色就出锅,不要糊了,也别烙不熟. 春饼里卷着用豆芽菜和粉丝加调料或炒或拌而成的菜,另外还要配炒菠菜、炒韭菜、摊鸡蛋等热菜以及被称为“盒子菜”的熟肉,如酱肘花、酱肉、熏肉、炉肉(均要切丝).

韶章汪15233375928 ______ 我经常这样做: 1、面粉500g放在盆里,中间凹坑,倒入滚开水,用面杖搅匀.等面凉了,用手揉匀,放在盆里,盖上湿布醒一会,别太硬了. 2、将醒好的面团放在面板上,搓成长条再切成剂子. 3、将剂子按扁,刷一层食油. 4、把两个压扁的剂子叠在一起. 5、叠在一起擀成薄饼(两张一起可擀得单张很薄的) 6、平底锅里刷一层油(也可用饼铛),用小火烙这双层薄饼,经常翻面,烙成两面都熟而不焦. 7、把烙好的双层饼用手拍一下,趁热分开成两张春饼. 包菜吃,蘸酱吃都很好.

韶章汪15233375928 ______ 用料:小麦粉,沸水、盐少量、食用油. 春饼做法 1、将小麦粉和少许盐放于一盆中,分次少量倒入沸水,用筷子搅拌成雪片状. 2、稍晾凉不烫手后将面揉成光滑的面团,面团可以稍微和得软一些.然后盖上湿布或保鲜膜,饧20-30分钟. 3、将面团取出,揉成长条,切成大小均匀的面剂,按扁. 4、将面饼的一面均匀的刷上一层食用油.然后每两个对合成一对,用擀面杖擀成薄厚均匀的圆饼. 5、平底锅中涂一层油,将擀好的饼放入,小火烙至两面变色,中间鼓起即可. 上桌时揭开取一单张,放入盘中,配上土豆丝、炒豆芽、炒酸菜、卤肘子、葱丝、面酱卷成卷即可食用,嗜辣一族还可以配上辣椒丝或者辣椒红油,更是美味!

韶章汪15233375928 ______ 就是和面.和和饺子面差不多,稍微可以软一点,但一定要揉透,而且醒面的时间最好长一点.醒好之后,再揉揉,然后揪成差不多大小的剂子 2 然后把2个剂子叠起来,之间要蘸点油,多一点,周围也要蘸上 3 接着,擀成薄饼.能擀多薄就多薄.用力要均匀,不要弄破. 4 把锅子烧热,锅底抹油,把饼放上去烙着,两面都要烙.因为饼薄,所以熟得很快的.注意控制火候,别烙焦了 5 再接着,把烙好的饼扔进另一个锅子了,注意要盖上盖子. 6 放上一会儿,等饼差不多温了,饼会软一点,或者等要吃的时候,再仔细的把饼撕开,就可以了. 最后,做这个也没什么希奇的,就是我才知道要2个一起擀一起烙,这样才会比较薄.不过要3个、4个一起来的话,就太难了,最后很难撕开的.
